Tofu Chili

This is a recipe my Mom and James love to make. It tastes so good, you would never think it was tofu. I have no idea where Mom got it from originally.

Tofu Chili
From: Mom

3T vegetable oil
14 oz. package firm tofu, crumbled
1 onion, diced
1 green bell pepper, diced
3 cloves minced garlic
1 cup sliced mushrooms
3T chili powder
salt & pepper to taste
1/4 tsp. cayenne pepper
1/2 tsp. cumin
14 oz. can tomato sauce
28 oz. can diced tomatoes (do not drain)
28 oz. can kidney beans
3T sugar

In large pot saute' tofu in oil about 3 minutes. Add onion, peppers, garlic, mushrooms, chili powder, salt, pepper, cayenne, cumin. Cook until vegetables are tender (about 5 minutes). Add tomato sauce, diced tomatoes, beans, & sugar. Bring to a slow simmer, cover and allow to cook for at least 45 minutes.
