Shepherds Pie

Another super super easy one that turns out great every time. I don't make this very often because it is just SO bad for you. Some would argue that most of the recipes on this blog are bad for you.. and they are probably right. But that's what makes them TASTE so good! haha. But once in a while I like to treat myself and make this. It is so good!

Shepherds Pie

1 lb. ground beef
½ cup chopped onion
½ cup chopped celery
1 (10 ounce) can condensed vegetable soup
3 cups mashed potatoes
1/3 cup thyme
1 cup shredded longhorn cheese

In large skillet stir & cook beef, onion & celery until juice run clear. Pout mixture into 9x12 baking pan. Mix in vegetable soup and thyme, stir well. Spread Mashed potatoes on top evenly. Bake for 20 minutes @ 350; remove pan and sprinkle cheese on top, return it to oven and bake for 5 minutes longer.

*to make it easier- you can get pre-chopped onion and celery in the produce section and you can use instant mashed potato flakes. (with a little butter they CAN be doctored to taste like the "real" thing)

*With ANY recipe that calls for ground beef- you can always substitute ground turkey and you cannot tell a difference and the turkey is much healthier than the beef.
