Savory Sweet Potatoes

Ok so I have to admit I am not a fan of sweet potatoes. It is one of the few veggies I just don't like. One day while shopping in Schnucks they were giving out samples of this and had all the ingredients laid out to buy. I went ahead and tried it, because my rule is always at least TRY it before you say you don't like it- you will NOT die. And it was goood. So their evil trick worked and we bought all the stuff we needed after she gave us a recipe card and have made it a few times since. It is REALLY good. If you like sweet potatoes you will love it, if you don't.. you will love it. Yummm. 
Savory Sweet Potatoes
From: Schnucks Kiosk Lady :-) 
4 large sweet potatoes

2 T. unsalted Butter
4 green onions, chopped. (about ½ cup)
½ cup sour cream
Salt
Pepper

With knife carefully pierce each potato about six times. Place potatoes in microwave and cook on high for 15 to 17 minutes or until knife is easily inserted into center of potatoes.

When cool enough to handle, with 2 forks, remove skin and any dark spots from potatoes.
In medium bowl, mash potatoes with butter. Set aside some green onion to use for garnish. Stir in remaining onions and salt and pepper to taste. Transfer potatoes to serving bowl, top with sour cream and sprinkle with reserved green onions.
