No Boil Noodles Lasagna

THIS is a great recipe passed on to me from Merletta. It is the easiest lasagna you will ever make and it is unbelievably good. I love that you don't have to boil the noodles and they come out perfect EVERY time. I have a variation to this recipe at the bottom- both ways are delicious. Enjoy!

No Boil Noodles Lasagna
From: Merletta
1 package lasagna noodles (uncooked)
2 lbs. ground beef
1 can stewed tomatoes
1 can tomato sauce
1/4 cup sugar
2 eggs (beaten)
2 cans V-8 juice (24 oz. total)
1 large carton cottage cheese
Shredded Mozzarella Cheese
½ cup powdered parmesan cheese
1 packet spaghetti seasoning

Beat cottage cheese and eggs together; set aside.

In large skillet brown ground beef then drain and put back into skillet, mix in v-8, tomatoes, tomato sauce, spaghetti seasoning and sugar; bring to a boil and lower heat. Let simmer for 10 minutes.

First layer some of the meat sauce in bottom of 9X13 pan,
then an even layer of noodles (uncooked),
then layer generously with shredded mozzarella,
then layer some of the cottage cheese mix,
then layer some of the powdered cheese
and end with some of the meat sauce.

Repeat layers until all ingredients are used. Bake @ 350 for 1 hour. 


It usually works out to 2 layers of each, especially if you are using a 9x13 pan, there won't be much room for more than that. If using a larger pan (I use a roasting pan when cooking for more people..) double the ingredients, and will probably make more layers.. remember you should probably put a cookie sheet or something under the pan in case it boils over a little, especially if using a 9x13 size pan... 

* When I make this I omit the spaghetti seasoning. I forgot to get it once and made it without it, and it made the sauce just a little sweeter. Everyone loved it that way so now I usually just leave it out.
