Beef and Potato Stew

Growing up this is the only stew that I knew anything about. It is the simplest stew in the world and man is it good. This is my Momma's recipe. Enjoy. 


Beef and Potato Stew
From: Judy
4-6 lbs. stew beef

5 lbs. potatoes (red or white)
4 lg. onions (yellow)
Salt & pepper to taste

Put beef in large pot of water. Add salt & pepper and ½ of onions, bring to a boil. Turn heat down & cover, let simmer for 2-3 hours until meat is tender. Add potatoes & rest of onion for the last 40 minutes of cooking.
