Pumpkin Harvest Bars

This recipe is one that I found in a cookbook somewhere a few years ago. If I find which one it was- I will credit later. Very good on a fall day. 


Pumpkin Harvest Bars



1 ¾ cup all-purpose flour
2 tsp baking powder
1 tsp grated orange peel
1 tsp ground cinnamon
½ tsp salt
½ tsp ground nutmeg
¼ tsp ground ginger
¼ tsp ground cloves
¾ cup sugar
½ cup applesauce
½ cup solid-pack pumpkin
1 whole egg (large)
1 egg white (also large)
2 T vegetable oil
½ cup raisins


Spray a 13x9 baking pan. In a small bowl, combine flour, baking powder, orange peel, cinnamon, salt, nutmeg, ginger, and cloves. In a large bowl, combine sugar, applesauce, pumpkin, whole egg, egg white, and oil. Add flour mixture to applesauce mixture and stir until well blended. Stir in raisins. Spread batter into prepared pan. Bake at 350° for 25-30 minutes. Let cool on wire rack for 15 minutes.
