Jalapeño Cornbread

This cornbread is amazing! It isn't your traditional cornbread, it is a little sweeter and it hello! it has bacon in it. Yeah. It is not hot at all, I love it and I am NOT a spicy person at all. It goes really good with any kind of beans. 


Jalapeño Cornbread

2 boxes Jiffy Corn muffin Mix
2 T. Sugar
3 eggs, beaten
2 cups milk
½ cup oil
6 slices of bacon, cooked & crumbled
6 oz. shredded cheddar cheese
1 large onion, diced
4 oz. pimento, drained and diced
2 T. Minced jalapeño peppers

Combine corn muffin mix and sugar in large bowl. Add eggs, milk, and oil- mixing well. Stir in remaining ingredients. Pour batter in greased 9x13 baking pan. Bake @ 400 for 40 to 45 minutes, or until done.
