Baked Potato Soup

  This is one that I found on pinterest and have seen posted to facebook a lot lately. It sounded good and since it is FREEZING outside it was the perfect time to try this one. Everyone LOVED it. It is the best potato soup I have ever had! It was even better because we had leftover hog jowl from new years day so instead of frying bacon, I just chopped up some of the leftover jowl and used it instead. As a matter of fact as soon as I post this I am going to reheat me a bowl of this for my lunch. Be jealous. :-) 



Baked Potato Soup

2 ½ pounds baby red potatoes, sliced into bite size pieces
1 package bacon
1 onion, diced
¼ bunch celery, diced
8 cups milk
4 cups chicken stock or broth
1 tsp salt
1 tsp seasoned salt
1 tsp black pepper
1 cup salted butter
1 cup flour
½ bunch fresh parsley
1 cup whipping cream
shredded cheddar
fried bacon bits
green onion, diced

Boil potatoes in water, 10 minutes, drain and set aside.

In saute' pan, cook bacon until crisp. Drain bacon fat and place on paper towel to drain more.

Add onion and celery to bacon pan over medium-high heat until celery is tender, about 5 minutes.

To the large pan you boiled potatoes in, add milk, broth, salt and pepper. Cook over medium-high heat until mixture is very hot, about 8 minutes, stirring often, Do not let boil.

In small saucepan heat butter. Add flour and mix well. Cook over medium-low heat until mixture bubbles, stirring 2 to 3 minutes to make a roux.

While constantly stirring soup, add roux slowly until soup is thick and creamy, about 4 minutes. Let simmer for about 30 minutes or until flavors incorporate.

Stir in parsley, reserved potatoes, bacon (reserve some for garnish if desired), celery, onions, and cream.

Garnish with cheese, bacon bits, green onions, or all 3. Serve hot.

James' Chili

  This past weekend my brother came to visit and made his chili for us one night. It was the best chili I think I have EVER had. Knowing that Mom and I don't like spicy much, and our young kids would be eating it, he made it without the cayenne and less chili powder than he usually makes it with, but it was so good. It was a good, thick, hearty chili. I immediately had him give me the recipe so I could make it and post it here. Until now I didn't have a good chili recipe because I am addicted to my Mom's Chili Soup  so whenever we are in the mood for chili, I usually make that. Because it is amazing and full of veggies and well, it's delicious. So now I have a great chili recipe too! I'm so excited. Anyway- it is cold outside and perfect for a nice bowl of chili. Make this and curl up by the fire and enjoy! James said it is even better if you throw all of this in the slow cooker and let it sit all day while you're at work. I may have to try that! Love a good slow cooker recipe! 


James' chili

1 large tomato sauce
1 regular tomato sauce
1 can green beans
1 can corn
1 can dark kidney beans
1 can light kidney beans
1 bell pepper, diced
3-4 cloves garlic
2 T flour
1 T garlic powder
1 T onion powder
2 tsp chili powder
2 tap cumin
1 tsp basil
2 lbs ground beef

If you want it spicy- do 4 tsp chili powder and 1 T cayenne

Mix seasonings and flour together, set aside.
Brown meat, and drain.
Saute pepper and garlic and add to pot,
Add all canned ingredients, stir.
Add seasonings and bring to a boil, lower temp and let simmer for a couple of hours.

Serve hot with crackers, diced onions, shredded cheese, sour cream... whatever your family likes.

Chicken, Bacon, and Sage Fettuccine Alfredo

  I saw someone make this last week on Food Network and decided I wanted to try it. I already know I LOVE fried sage so of course that is what caught my eye. Just a nice way to change up your normal Fettuccine Alfredo, even if you want to leave out the sage- the bacon wrapped chicken would be delicious. But I suggest trying the fried sage. It takes 2 seconds and it is really delicious.

4 Chicken Breast
several leaves of fresh sage
Butter
1 Package of bacon


    Start by putting a few tablespoons of butter in olive oil and melting the butter. Once the oil is good and hot drop in your leaves of fresh sage and fry it for just a second. It will burn quickly, so be careful. You just want to crisp it up a bit. Then pound out your chicken breast to thin them out a bit, place a pad of butter in the middle, along with a 2 or 3 pieces of fried sage. Fold the chicken back over itself and wrap with bacon. Place it seam side down in a greased 9x13 pan. Once they are all wrapped and in the pan bake it at 425 for 40 minutes, or until a meat thermometer says the chicken is done. Then place the chicken under the broiler for a minute or 2 to crisp up the bacon. Now, if your chicken is swimming in a lot of bacon drippings and butter- you may want to drain that off first, otherwise the bottom side will never crisp up. Once the chicken is completely done, slice it into large slices and place it over a plate of Fettuccine Alfredo. Talk about delicious!! I mean.. it is bacon.

Herb Roasted Chicken

I have never really roasted a chicken before, I have no idea why. So when I realized I had a whole chicken in my freezer that I needed to cook I decided to look up a recipe to roast it that didn't include lemons. I love lemons but I use them on my fish a lot and Hubby was getting tired of lemon pepper. Plus my little brother was coming over and I knew he wasn't a fan of lemons on anything. SO I found this one by Anne Burrell and even though I think she is a great chef and somewhat like her show (when she isn't being obnoxious...) I have never tried one of her recipes, it didn't have lemons.. so I went for it. It turned out delicious. It was super easy and everyone loved it. Going in the "keeper" box for sure. I made a few modifications to the recipe so I will post how I made it and link to her original recipe below. Enjoy! 


Herb Roasted Chicken

1 whole chicken
2-3 sprigs fresh rosemary, picked and finely chopped
5-6 fresh sage leaves, chopped
3 cloves of garlic, finely chopped
dash of red pepper flaskes
1 T onion powder
2 tsp fresh chives, chopped
1/2 cup fresh parsley, chopped
1 tsp bay leaves, chopped (not whole leaf) 
2 tsp salt
pepper to taste
4 cups chicken stock or broth (large box) 
4 T olive oil plus more for drizzling


Preheat oven to 450°

    In a small bowl combine all seasonings with olive oil and set aside.  Using your fingertips carefully work your way under the skin of the chicken to separate the skin from the breast to make a pocket. Now push handfulls of your seasoning mix into the pocket and rub all over to coat the inside of the chicken, using all the seasoning mix. Now drizzle the outside of the chicken generously with olive oil and massage it into the skin all over. Basically think of tanning oil and rub it all over. Sprinkle with salt and any little bits of herb stuck to your hands from stuffing it under the skin is fine. 
   
    Using a large roasting pan with a rack place the chicken on the rack and pour the chicken broth into the bottom of the pan. Cover with foil and bake for 1 1/2 hours. Then take the foil off and bake an additional 15-20 minutes or until the skin is nice and crispy with a nice dark color to it. 

     Remove from the oven and let rest for about 10 minutes before carving. While chicken is resting pour the stock from the pan (and all the drippings that have fallen into it from the chicken) into a sauce pot over medium heat. In a small bowl to the side mix warm water with corn starch to dissolve the corn starch. When the drippings and stock start to boil add the corn starch mixture to the stock slowly until it starts to thicken to your desired consistency. This is a fantastic sauce to pour over your chicken or sides. Carve your chicken and serve while hot!

Chicken Parmesan Baked Pasta

Once again, I found this recipe (and a great blog by the way) while searching recipes on pinterest. This one was easy to make and had a great, lighter flavor. I will definitely be making it again and again!!! 

Chicken Parmesan Baked Pasta

1 (28 oz) can whole peeled tomatoes
1 tablespoon olive oil
6 garlic cloves, minced
1/4 teaspoon dried oregano
1/8 teaspoon crushed red pepper flakes
1/4 teaspoon kosher salt
2 cups water
1 - 1 1/2 cups low-sodium chicken broth
12 oz pasta (I used shells) 
2 oz (about 1 cup) grated Parmesan cheese, divided
1/4 teaspoon black pepper
4 oz (about 1 cup) shredded mozzarella cheese 
1 lb boneless, skinless chicken breasts, cooked and cut into bite-sized pieces
2 tablespoons chopped fresh basil

Preheat the oven to 475 F.

Add the tomatoes to the bowl of your food processor and pulse until coarsely chopped, about 10 pulses. Set an oven-safe 12-inch skillet over medium-high heat. Add the oil, garlic, oregano, red pepper flakes, and salt and cook just until fragrant, about 1 minute. Add the chopped tomatoes, the water, 1 cup of the chicken broth, and the pasta to the pan, stirring to combine. Bring the mixture to a vigorous simmer, then cover the pan and continue simmering (you may need to reduce the heat slightly) until the pasta is tender, about 16-18 minutes. Stir the pasta frequently as it cooks.

Once tender, remove the cover and stir in 3/4 cup of the Parmesan cheese, the pepper, and the chicken. Season to taste with additional salt and pepper if necessary. If the mixture seems dry, mix in as much of the remaining 1/2 cup of chicken broth as needed to loosen it up (I didn't add any of it). {Note: if you don't have an oven-safe skillet, transfer the mixture to a baking dish at this point.} Sprinkle the top evenly with the mozzarella cheese and the remaining Parmesan cheese. Transfer the pan to the oven and bake for 5-10 minutes, or until the cheese has melted and bubbles around the edges. Garnish with the basil then serve.

How to cook a steak

So I have never attempted to cook a steak. It has always been intimidating for some reason. So I decided I was going to buy some steaks and learn how to make them finally. So I googled it. I found several recipes for the cut of steak I had, Tenderloin Steak, and picked the one that looked best. Turned out it was perfect. I made good steaks! Yay!! And it was actually reallllly easy. Now that I know how easy it is, I will be making them more often! Here is how I did it.

How to cook Beef Tenderloin Steak

1) remove the tenderloins from the refrigerator 20 minutes before cooking to bring them to room temperature.

2) Pat the tenderloins dry with paper towels. Sprinkle generously with salt and fresh ground pepper. Massage the seasoning into the meat.

3) Rub oil on the outside of the steaks.

Cooking:

1) Heat the skillet over medium-high heat to scalding, until a drop of water sizzles and dances on the skillet. Put 1 T of oil into the middle of the skillet and swish it around to cover the cooking surface. Heat the oil until it begins to smoke.

2) Place the tenderloins in the middle of the skillet. With your fingers or tongs, move the steaks around in a circular motion to spread the oil. Sear the steaks for 2-3 minutes. Use tons to flip the steaks and sear the other side for 2-3 minutes. This searing causes proteins in the steaks' surface to interact with the sugars, creating a flavorful crust containing hundreds of different-flavored compounds.

3) Lower the heat to medium. Cook for and additional 7-9 minutes total, flipping the steaks occasionally, for medium rare or medium. Cook the steaks to 125 Fahrenheit for rare, 130 for medium rare and 140 for medium. The steaks will continue to heat after you remove them from the skillet.

4) Transfer the steaks to a plate and cover them loosely with aluminum foil. Allow them to rest for 10-15 minutes. This chances their flavor and gives the juices time to distribute evenly through the tenderloins.

5) De-glaze the skillet with 1 T butter and 2 T water. Heat the skillet over medium heat and scrape the bottom of the skillet with your spatula to loosen any charred remnants. Reduce the liquid a little. Drizzle the  liquid over the tenderloins.

Avocado Dressing, Chicken Salad

I found this recipe on a blog via pinterest. I decided to make it with what I had in the pantry, which was most of what the original recipe called for, and tuna instead of chicken. It was delicious. The dressing part of this recipe is the best part. I have a zillion ideas for it bouncing in my head as soon as I trasted it. It was great with the tuna, diced tomato, onion, and diced avocado on toasted bread. You could do the dressing, avocado, diced tomato, onion, and chunked chicken and toss it with pasta. I used the dressing alone instead of mayo on my sandwich today for lunch. Put it on tacos, enchiladas, nachos, anything mexican it would be perfect for. Use the dressing as dressing on wedge salad. Use it as a dip with tortilla chips. You get the idea. It's fantastic. And the best part is compared to oh say ranch dressing at the store.. it is remarkably low calorie! 12 calories per tablespoon compared to 70 in a tablespoon of ranch, even the light ranch has 40 calories per tablespoon. The nasty fat free ranch is 15 calories per tablespoon. And the avocado is not only fresh and better for you- it tastes WAY better than fat free or low fat dressing. Plus it was super easy to whip up in just a few seconds. The recipe below is how I made it, click the link to see the original recipe. 

Avacado Dressing / Chicken Salad


Dressing: 
2 avocados
1 cup buttermilk
1/3 cup diced onion
1 T dried parsley
juice from 2 limes (about 2 T) 


Salad: 
tuna, drained (or chicken as the original recipe calls for.. can use anything you have on hand) 
1 avocado, diced
2 cups cherry tomatoes, halved (or a larger tomato diced) 
1/2 red onion, diced

In a food processor blend all the dressing ingredients until smooth. Toss dressing with salad ingredients and enjoy on toasted bread, tossed with pasta... endless possibilities. 

UPDATE: I made this last night with chicken and poured it over nachos. Just some good tortilla chips with shredded cheddar, stick it in the oven (or microwave) to melt the cheese then I globbed the chicken salad over the top and spread it around. It was delicious!

Breakfast Casserole

Another Pinterest recipe! Gotta love Pinterest! Ha! This was a simple and delicious recipe. I think it would be great for feeding a large group of people breakfast, or for Christmas morning because most of the ingredients could be prepared ahead of time and just thrown together. The original recipe, found at Bubble Crumb called for bacon, but I had sausage already so I used that instead. I also used a few more eggs, onion, and peppers than the original called for. This is a keeper! 


Breakfast Casserole 
From: Bubble Crumb

3/4 bag frozen tator tots
1 onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 package sausage, cooked and crumbled
10 eggs
2 cups milk
3 cups shredded cheddar (or colby jack)

Preheat oven according to directions on tator tots package. Place tator tots in a layer on bottom of 9x13 pan. Salt and pepper to taste. Bake until tots are golden brown, according to package directions. Remove from oven and set aside. Lower oven temp to 350. 

In a mixing bowl combine eggs, milk, and cheese. Mix well and set aside. 
In a frying pan cook sausage and crumble (or use a broiler pan and bake it along with tots) 
Reserving some bacon grease (about 1 T) and add onions, bell peppers and saute' until soft. 
Layer cooked onions on top of tator tots. 
Then add a layer of sausage or bacon. 
And finally pour the egg and cheese mixture over the top. 
Cover with aluminum foil and bake at 350 for 45 minutes. 
Uncover and bake an additional 30 minutes. 
Serve while hot.

Slow Cooker Enchiladas

This is a recipe my brother, Rob, came across years ago. Somehow that recipe that was jotted down on a piece of paper, got stuck in a cookbook and we lost it. BUT the other day I accidentally found it! Yay! So here is the long lost recipe. I have never made this but I plan to next week. My brother did however make it for me years ago and I remember it being delicious! And it is so simple to throw together! Enjoy!! 


Slow Cooker Enchiladas
From: Rob

1 lb ground beef
1 cup diced onion
1 can ranch style black beans (drained and rinsed)
1 can black beans- plain
1 can mild rotel
1 pkg taco seasoning
1/2 cup water
shredded cheddar

1 package flour tortillas

Brown ground beef and onions until cooked. Drain and add all other ingredients. In slow cooker- Layer tortilla, then mix, then shredded cheese and repeat until mixture is used up and top with cheese. Cook on high for 1 1/2 hours and serve with sour cream.

Artichoke Spaghetti

I found this recipe on The Pioneer Woman website. Finally made it for dinner tonight and it was DELICIOUS- as ALL Pioneer Woman recipes are. All of them. Mine came out a little runny so next time I make it I am thinking I will drain the diced tomatoes. I also think I would like trying it with more cheese and putting it all in the oven for just a minute to let the pasta soak up some more of the sauce before serving it.. Not that it wasn't absolutely delicious the way I made it tonight- but just a few tweeks I might try next time around. If you don't like artichokes- skip this one. It has an amazing yummy artichoke taste to it. 


Artichoke Spaghetti 

Ingredients

  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Butter
  • 3 cloves Garlic, Minced
  • 1/2 whole Medium Onion, Finely Diced
  • 1 can Artichoke Hearts (14.5 Oz. Quartered Or Whole) Drained
  • 1 can Diced Tomatoes With Juice (14.5 Oz.)
  • 1 cup Heavy Cream
  • 1/2 cup Chicken Broth (More As Needed)
  • 1/2 teaspoon Nutmeg
  • Salt And Pepper, to taste
  • 1 pound Thin Spaghetti
  • 1 cup Parmesan Cheese, Freshly Grated
  • 2 Tablespoons Fresh Chives (or Other Herbs) Chopped

Preparation Instructions

Cook spaghetti till al dente. Drain and set aside.
Melt olive oil and butter in a large skillet over medium heat. Add onions and garlic and saute for 2 to 3 minutes.
Add artichoke hearts and tomatoes. Stir and cook for 8 to 10 minutes. Reduce heat to low. Stir in cream and chicken broth. Add salt and pepper to taste (do not undersalt!) Cook over low heat until heated through, then turn off heat.
Place drained pasta in a large bowl. Sprinkle with 1 cup Parmesan. Pour sauce over the top. Add chives. Toss lightly to combine and coat; add a tiny bit of reserved pasta water if sauce seems too thick.

My Stew Recipe

Last night I decided stew sounded good. I didn't really have a recipe so I just made it up as I went along. It turned out delicious so I'm going to put it on here, but I may tweak it a little next time. I think I would use more potatoes next time maybe?

My Beef Stew Recipe

2 cups tomato juice
2 cups water (maybe more?)
stew meat
1 onion
1 bag frozen "vegetables for stew" from frozen section
large carton beef stock
salt 
pepper
spices- what you normally like

First I put the stew meat in the pot alone and let it brown. While it was browning I dumped all kinds of spices in- I used onion powder, garlic powder, salt, pepper, seasoned meat tenderizer, parsley, basil, chopped bay leaves, red pepper flakes, a splash or two of hot sauce, and a few splashes of worchestershire sauce. (I suggest adding whatever spices you usually like to use..) Then I cut up an onion (left it in fairly large pieces) and added it to the meat and let it all cook and brown for just a couple of minutes. Then I added in the tomato juice, and beef stock. Then I added in the frozen veggies and added about 2-3 cups of hot water, until there was enough liquid to cover all the ingredients. Stir it well and bring to a boil. Then turn down to low and let simmer for 4 or 5 hours. 

Yummmmmy it was so good. I think next time I will take the time to chunk up my own vegetables only because the pieces were small and I would have liked more potato, but it was absolutely delicious just as it was. Definitely a great way to make a quick and easy stew!

Fiesta Chicken with Avocado Salsa

This is a recipe I found in my FAVORITE cookbook- the original Betty Crocker cookbook. I thought it looked good and summery and I could use some of my fresh stuff from the market in it. I made a few changes to the original, so if you want to check the original recipe you can find it HERE. Make this one- you will not be sorry. I made it and my brother, James who hates anything citrus or with onion said it was delicious and my 2 year old son and nephew ate it up. It was definitely a hit. Also this recipe calls for jalapeno, I don't like spicy and I had little guys eating it so I substituted that with some sweet peppers. And the marinade calls for Cumin, which I do not have, so I substituted Tumeric (which is REALLLLLY good for you.. google it!) a dash of paprika, and to help with the absence of jalapeno I also added a few drops of hot sauce. :-) I made this with a Red Beans and Rice recipe from the same cookbook. Mom said it was the best beans and rice she had ever had. It was SOOOO good. 



Fiesta Chicken Breast With Avocado Salsa


Tomato-avocado salsa
2 medium tomatoes, diced
1 medium avocado, peeled and diced
4 medium green onions, diced. (1/4 cup)
2 T lime juice
2 sweet peppers, chopped
2 or 3 dashes of hot sauce
1 clove garlic, finely chopped
1/4 tsp salt


Chicken
4 bone-in chicken breast
1/4 cup lime juice
1/4 cup extra virgin olive oil
1/2 tsp tumeric
2 or 3 dashes of paprika
1/2 tsp salt
2 T extra virgin olive oil
1 package flour tortillas (8 inch) cut into strips


Step 1- 
In medium bowl gently mix all salsa ingredients. Refrigerate until ready to serve. 


Step 2- 
Place chicken in shallow dish. In small bowl mix 1/4 cup lime juice, 1/4 cup oil, tumeric, paprika, and salt. Pour over chicken. Cover and refrigerate 1 hour. 


Step 3- 
Heat oven to 375, spray a 9x13 pan with cooking spray. 


Step 4- 
Place chicken, skin sides up, in pan. Pour marinade over chicken. Cover and bake 30 minutes. uncover and bake 30 minutes longer, brushing occasionally with marinade, until thickest part of chicken is 170F


Step 5-
In 10 inch skillet heat 2 T oil over medium-high heat until hot. Cook trotilla strips in oil until crisp and golden brown. Serve chicken topped with salsa and tortilla strips on the side. 


Now since I had fried bacon to go in my Beans & Rice- I used the bacon grease from that to fry the tortilla strips, and I used SPELT tortilla's from the organic store. They were so good Mom and I almost made ourselves sick snacking on them and Zach ate so many he didn't want to eat his chicken. It was a lot easier to fry these than I thought, I will definitely be doing it again in the future for other dishes!!

Low Calorie Meat Loaf

This is a recipe I found HERE for a lower calorie meatloaf. I was worried about the carrots, but they give a great sweet taste to the meatloaf. I made a few alterations to the original recipe and it turned out SO GOOD. I recommend trying this one FOR SURE! 175 calories a slice! (a good thick slice too!) 

Low Calorie Meatloaf

  • 1 1/2 cups plain breadcrumbs
  • 1/3 cup skim milk
  • 1 medium onion, diced
  • 1 cup shredded carrot
  • 1 8 ounce pack sliced mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 1 1/4 pounds 93 percent lean ground turkey
  • 1/2 cup egg substitute
  • 1 tbsp Worcestershire Sauce
  • 1/4 cup tomato ketchup
Preheat oven to 400 degrees. 

Place onion, carrots, garlic, and mushrooms in a large bowl. Add ground turkey, breadcrumbs, milk, egg substitute, worcestershire sauce, and ketchup to vegetables and mix well with hands. Divide into 2 loaves and place into 2 loaf pans. (Or you can form into 2 loaves and place on a baking sheet, but cook for less time) Bake for 1 hour, until internal temperature is 160 degrees. 

Each loaf made 6 slices for me.. the thinner the slices, the fewer the calories... :-) Enjoy!

Un-stuffed Cabbage Casserole

I found this ridiculously good recipe on pinterest, of course. We love stuffed cabbage in my house, so this was awesome. A way to have "stuffed cabbage" without having to roll all those cabbage leaves.I will put down the original recipe, and at the end I will write how I altered it tonight.. And the very very best part is.. if you use ground turkey instead of ground beef like we do.. it was only 362 calories a serving!! Now listen- a serving in this case is 1/8 of a 9x13 pan. Why? Because that is a nice big portion and it is easy divide the pan this way..and so on. It ended up being quite a bit of food. When I finished I was stuffed (no pun intended!) And Jeff was holding his belly sad that he didn't have room for seconds. I fixed Zach some turkey vegetable stew, because I was afraid all that cabbage would give him a tummy ache- but he ate about a dozen bites off me and Jeff's plates and was begging for more.. needless to say, it was a hit! Definitely going into my "favorite recipes" binder. Can't  beat a good portion of food with less than 400 calories and lots of good stuff in it for ya. Love it!

Un-Stuffed Cabbage Casserole

Here is the ORIGINAL RECIPE
Ingredients:
1 1/2 T olive oil, divided (more or less, depending on your pan)
1 lb. lean ground beef
1 large onion, chopped small
1 T finely minced garlic 
1/2 tsp. dried thyme
1 tsp. sweet Hungarian Paprika (good quality paprika makes a big difference in flavor in a dish like this)
1/2 tsp. sharp Hungarian Paprika (optional; if making for kids I might leave this out) 
salt and fresh ground black pepper to taste (for seasoning meat mixture and cooked cabbage)
1 1/2 heads green cabbage, coarsely chopped
1 can (14.5 oz.) petite dice tomatoes with juice
1 can (15 oz.) tomato sauce
1/4 cup water (just enough to rinse out each of the cans)
2 cups cooked rice (I used brown rice) 
2 cups low-fat cheese (optional; I used a blend of 80% low-fat mozzarella, 10% low-fat cheddar, and 10% Provolone.)


Instructions:
Preheat oven to 350F/180C.  Spray a large glass or crockery casserole dish with non-stick spray.  (I used a dish that was 12" x 10".)

Heat 1-2 tsp. olive oil in a large frying pan; add ground beef and cook until it's done and nicely browned, breaking apart as it cooks.  (I like to use a potato masher to break the meat apart once it's partly done.)  Remove ground beef to a bowl.

In the same pan, add a little more olive oil if needed, then add chopped onion and cook over medium heat until the onion is translucent and starting to brown, about 5 minutes.  Add the minced garlic, dried thyme, and paprika and cook about 2 minutes more.  Then add the diced tomatoes with juice, tomato sauce, and ground beef.  Rinse each of the cans out with a little water (about 1/4 cup total) and add to the pan.  Let mixture simmer until it's hot and slightly thickened, about 15-20 minutes.

While the meat mixture simmers, cut cabbage in half, cut out the core, and remove any wilted outer leaves, and then chop the cabbage coarsely into pieces.  (They don't have to be all the same size.  I chopped it into pieces that varied from 1/2 inch to 1 1/2 inches.)  Heat about 2 tsp. olive oil in a large frying pan or dutch oven with high sides, add the cabbage and cook over medium-high heat until the cabbage is wilted and about half cooked, turning it over several times so it all wilts and cooks.  Season cabbage with salt and fresh-ground black pepper.


When the meat and tomato sauce mixture has cooked 15-20 minutes and thickened a bit, stir in the 2 cups of cooked rice and gently combine.

Spray a large glass or crockery casserole dish with non-stick spray and the layer half the cabbage, half the meat mixture, other half of cabbage, and other half of meat mixture.  Cover tightly with foil and bake 40 minutes, or until the mixture is just starting to bubble on the edges.

Remove foil and sprinkle on cheese (if using.)  Bake uncovered an additional 20 minutes, or until the cheese is melted and starting to slightly brown.  Serve hot.

This freezes well, and I'm looking forward to enjoying it several more times when I eat the portions I have in the freezer.  To reheat, I would recommend thawing overnight in the refrigerator and then either microwaving it until hot or heating in the oven in a glass dish covered with foil.

Note: The things that I altered were- I used 2 small heads of cabbage because I was afraid since they were small it wouldn't be enough. I used 2 lbs of ground turkey instead of 1 pound of ground beef because WAYYYYY fewer calories in turkey, you can't tell a difference AT ALL, and I wanted plenty of meat in mine. It worked out perfect. I also didn't use the types of paprika mentioned because who the heck has that in their pantry? Not me. So I added 1 tsp of dried thyme and 1 tsp of plain ole paprika, and also made sure to season everything well with salt and pepper and I went. ALSO I did not layer this. And here is why. Because I was trying to get it in the oven so we could eat before midnight and rushing.. and forgot to add the rice (I used instant BROWN RICE) back into the meat mixture. So after the first 10 minutes I took the layered dish out of the oven, poured the rice over the top and mixed it all up. It made zero difference and it made it super easy to dish out later. Next time I won't bother layering at all. And lastly I did not put any cheese on it. For 2 reasons, 1- why add calories if you don't have to, and 2- we never put cheese on ours and I just don't think I would have liked it with cheese... but that's just me. (I KNOW! I LOVE cheese and usually load everything to the gills with it... but in this case. I didn't miss it)

Skinny Tortilla Soup

This recipe is from the Southeast Hospital Heart Healthy Cookbook. It is delicious. 
Skinny Tortilla Soup
1 can (16 oz.) fat free refried beans
1 can (16 oz) black beans, rinsed and drained
1 can (14 1/2 oz) reduced sodium chicken broth
1 1/2 cups frozen corn
3/4 cup chunky salsa
3/4 cup cubed cooked chicken breast
1/2 cup water
2 cups reduced fat shredded cheddar cheese, divided
28 baked tortilla chips, divided


   In a large saucepan, combine beans, broth, corn, salsa, chicken and water. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Add 1 cup cheese, cook and stir over low hear until melted. Crumble half of tortilla chips into soup bowls. Ladle soup over chips. Top each serving with 2 crumbled chips and sprinkle with remaining cheese. 


Serving Size- 1 cup
Yield- 7 servings

Beef Stuffed Zucchini

I found this recipe on the Taste of Home website. I made it last night and it was even better than I thought it would be! Super easy, my favorite kind of recipe! I did add a little more to the mixture when I added the egg, bread crumbs, etc. to the meat- I also added a little italian seasoning and garlic salt. It seemed too plain without it? Plus I had plain bread crumbs, not seasoned so that made a difference too. Anyway- make it tonight- you will love it! It's basically like meatloaf but in a zucchini boat. :-) 
Beef Stuffed Zucchini

4 medium zucchini
1 lb ground beef (or turkey)
½ cup chopped onion
1 egg
¾ cup marinara
¼ cup seasoned bread crumbs
¼ tsp salt
¼ tsp pepper
1 cup (4 oz) shredded monterey jack cheese, divided
additional marinara

Cut zucchini in half lengthwise, cut a thin slice from the bottom of each with a sharp knife to allow zucchini to sit flat. Scoop out pulp, leaving ¼ inch shells.

Place shells in an ungreased 3 qt. Microwave safe dish. Cover and microwave on high for 3 minutes or until crisp-tender, drain and set aside.

Meanwhile in a large skillet, cook beef and onion over medium heat until meat is no longer pink, drain. Remove from heat, stir in egg, marinara sauce, bread crumbs, salt, pepper, and ½ cup cheese.

Spoon about ¼ cup into each shell. Microwave, uncovered, on high for 4 minutes. Sprinkle with remaining cheese. Microwave 3-4 minutes longer or until thermometer inserted into the filling reads 160 degrees and zucchini are tender. Serve with additional marinara sauce.

Broccoli Cheddar Soup

This is from Food Network Magazine this past month. It was on the cover and just looked so delicious I had to try it. Who doesn't like Broccoli Cheddar soup? Well this one is even better because it sneaks it some other good veggies too. Served it with sliced french bread and it was so yummy. A GREAT fall soup. 


Broccoli Cheddar Soup
2T extra virgin olive oil
1 medium onion, finely chopped
2 stalks celery, finely chopped
2 cups chicken broth
2 cups half and half
1 lb russet potatoes, peeled and chopped
1 lb sweet potatoes, peeled and chopped
1 bay leaf
kosher salt and freshly ground pepper
2 cups chopped broccoli florets
1 1/3 cups shredded sharp cheddar cheese
croutons for topping, optional



Heat the olive oil in a large pot over medium-high heat. Add the onion and celery and cook, stirring, until softened, about 5 minutes. Add the chicken broth, half-and-half, both potatoes, bay leaf, 2 cups water, 1 teaspoon salt and 1/4 teaspoon pepper and bring to a boil.
Reduce the heat to medium low and simmer until the potatoes are tender, about 10 minutes. Meanwhile, put the broccoli in a microwave-safe bowl; add 3 tablespoons water and season with salt. Cover with plastic wrap and microwave until crisp-tender, about 4 minutes; drain.
When the potatoes are tender, remove the bay leaf from the soup and transfer the soup to a blender. Puree until smooth, leaving the filler cap slightly open to let steam escape (or puree the soup in the pot with an immersion blender). Return the soup to the pot and thin with water, if necessary. Return to a simmer over medium-low heat; stir in the broccoli and season with salt and pepper.
Add the cheese and stir until melted. Ladle the soup into bowls and top with croutons, if desired.

Notes: When it says use a blender or immersion blender.. please do. I thought I would use my food processor and it went everywhere. LOL. I realized I had to do it in much smaller batches and it finally got done, but wow what a mess. 
Also- I used a tad more half and half and chicken broth so it didn't need to be thinned later with water, and it was a bit creamier. I suggest using a bit more cheese if you like a really cheesy flavor because it came out a tad bland without extra cheese. I think the next time I make it I will add more cheese, and maybe add some chopped green onion as well just for a little extra something to it. Overall great soup and I will be making it again soon! Yum!

Breakfast Burritos

Trying to think of something a little different for dinner? Everyone likes breakfast for dinner once in a while, here is an easy way to have it a little easier! Make breakfast burritos! It's simple. Take your favorite breakfast foods and place them in a warmed tortilla shell, maybe add some shredded cheese, and enjoy! You can make them ahead of time and warm them in the oven, or place ingredients on the table and let everyone make their own. Here is how we make ours!


Scrambled eggs
Shredded Cheddar
Diced Onion
Diced Tomato
Diced Bell Pepper
Sausage patties cut in half
Tortilla shells


To make it even easier, get the pre-diced veggies in your produce section. We actually use a non-spicy pico mix from schnucks that is just delicious! Obviously the list of what you can add is endless. (peppers, fresh vegetables, different cheeses, salsa's, gravy, bacon, sausages...)

Mom's Meatloaf

This is a great recipe and best of all it is easy. Meatloaf gets a bad rap and I never understood why. Maybe it's because my Mom is a great cook and I never had "bad" meatloaf? So if you think you don't like it, try this recipe, it will change your mind! 
Meatloaf

2 lbs. 80/20 ground beef
20 saltine crackers, crushed 
2 eggs
1/2 medium onion, chopped
1/2 cup ketchup (plus more for top)
1/2 cup milk
about 4 cheese slices
salt and pepper to taste
Preheat oven at 350. Mix all ingredients together well (easiest to do with your hands). Place in loaf pan and bake at 350 for about an hour, or until middle reaches 160 degrees. In last 5 minutes of cooking take out of oven, place slices of cheese across top to cover then "drizzle" ketchup across cheese. (do not cover entirely!) Put back in oven for remaining 5 minutes for cheese to melt. 
*Note* you don't HAVE to use a loaf pan if you do not have one. Mom has formed it into a loaf and placed it in the middle of a 9x13 pan lots of times and it is fine. It may cook faster if you do it this way so be sure to keep an eye on it. 
Also- I don't recommend using ground turkey in this case. It is the first recipe I have found that it wasn't as good with ground turkey. In most cases I think it actually tastes better with ground turkey, but when we did the meatloaf it wasn't great.

Christi's Chicken Broccoli Rice


This is a new recipe I made up tonight, based on part of an old recipe. Yes I know there was already a recipe posted on here for this, but every time it wasn't just "right" so I tried something different tonight and it came out perfect. So I am taking the old one down and posting this one in it's place. Jamie also has a recipe for this on the blog as well. ;-) 

Christi's Chicken Broccoli Rice

3 boneless, skinless chicken breast; cubed
1 can cream of chicken soup
1 can cream of mushroom soup
3 cups minute rice
1 bag frozen broccoli
1 tsp parsley flakes
1 tsp basil flakes
1 tsp salt
1 tsp pepper
1 “shake” red pepper flakes
1 tsp onion powder
1 tsp garlic powder
1 tsp olive oil
water

preheat oven to 350

After cubing your chicken, place it in a pot and cover with water. Add olive oil to the water and all your seasonings. Boil until chicken is cooked through, about 30-45 minutes.

While chicken is cooking thaw broccoli in microwave, set aside.

Once chicken is cooked reserve 4-5 cups of the broth (depending on how creamy you want your rice- the more liquid the creamier it will be). Take out the chicken and set aside, pouring the reserved cups back into the pan. Now add your soups and bring back to a boil. Once broth is boiling remove from heat and add rice. Then add back in the cubed chicken and your thawed broccoli, salt and pepper again to taste if needed. Stir together and pour all into a 9x13 pan. Place in oven and bake at 350 for 45 minutes or until the rice is cooked.

You can add any seasoning you like to your broth to change the flavor to your tastes, and you can also add in your favorite cheese. Just add the cheese about 5-10 minutes before you are ready to take the casserole out of the oven.
