Christi's Bacon Pepper Poppers
Peppers of your choice
Bacon slices
Cream Cheese
You can use ANY kind of pepper you like. I don't like hot peppers so I actually buy the jar of Banana Peppers and I think the sweet mild taste of the peppers works better than the hotter ones.
Cut stem off peppers then slice peppers in half length-wise, scrape out all seeds.
With a spoon, fill peppers with cream cheese.
Cut your bacon slices into thirds. Wrap each stuffed pepper with a slice of bacon and secure with a toothpick.
Place peppers on sheet pan or I prefer a broiler pan because the grease drips off and the bacon crisps better.
Bake at 350 for 30-35 minutes or until bacon is cooked through and crispy. Serve while they are hot. Make sure to make a lot of these- they go fast!!
When we served some of these to Meemaw she REALLY liked them. We quickly found that you can wrap almost ANYTHING in bacon. Meemaw went a little crazy. You name a veggie and she wrapped it in bacon. Once she even made little bundles of green beans wrapped in bacon. I guess thats one way to get the kids to eat their vegetables.. but maybe not the healthiest idea!
